Cheese Pie w/Strawberry Topping

This quick and easy cheese pie with a home-made strawberry topping is sure to please!

Equipment

  • Large Mixing Bowl
  • Hand-held or Stand mixer
  • spoon or spatula (for scraping to to pie crust)
  • citrus juicer (optional)

Ingredients

For Cheese Pie

  • 8 oz Philadelphia Original Cream Cheese (1 box)
  • 1 can condensed milk (14 oz.)
  • 2-3 T Fresh lemon juice (the juice of one lemon)
  • 1-2 tsp vanilla extract (based on how strong you want the vanilla flavor)
  • 1 prepared graham cracker pie crust

For Strawberry Topping

  • 1 cup of frozen strawberries
  • 2 tablespoons of granulated sugar

Instructions

To Prepare Cheese Pie

  • a. In a large mixing bowl, combine the Philadelphia Original Cream Cheese, condensed milk, lemon juice, and vanilla extract.
  • b. Blend all the ingredients together until smooth and well-incorporated.
  • c. Pour the creamy mixture into the prepared graham cracker pie crust, spreading it evenly.
  • d. Use a spatula to smooth the top, ensuring a flat surface.
  • e. Place the pie in the refrigerator and let it chill for at least 8 hours or overnight. This will allow the flavors to meld together and the pie to set completely.

To Prepare Strawberry Topping

  • a. In a bowl, combine the frozen strawberries and granulated sugar.
  • b. Allow the strawberries and sugar to sit for about 30 minutes, allowing the sugar to draw out the natural juices from the berries.
  • c. During this time, the sugar will dissolve into the strawberry juice, creating a flavorful syrup.

To Serve

  • a. Once the Cream Cheese Pie has fully chilled and set, remove it from the refrigerator.
  • b. Give the strawberry topping a good stir to mix the syrup evenly with the strawberries.
  • c. Pour the strawberry topping generously over the entire pie or each individual slice prior to serving.

Notes

- For an extra touch of freshness, you can add a squeeze of lemon juice to the strawberry topping to enhance the flavor.
- Feel free to experiment with other fruits or toppings of your choice, such as blueberries, raspberries, or a drizzle of chocolate syrup.

Tips

    • Make Sure your cream cheese is room temperature before blending with other ingredients
    • To make a nice strawberry topping slightly pulse half of the mixture in a food processor or blender and add back to the remainder and mix together.
    • leave the pie plain and serve the strawberries on the side to accommodate those with allergies or those who do not care for strawberries.
    • To make this Pie Dairy Free Use Coconut Condensed Milk and Plant-based cream cheese
