Peach Cobbler French Toast

A southern twist on a classical favorite!

This delightful twist on classic French toast combines the flavors of Southern peach cobbler with a touch of cinnamon, nutmeg, and a hint of peach schnapps. Topped with a warm peach cobbler mixture and served with a side of fried peaches and a dollop of homemade whipped cream, this dish is perfect for a weekend brunch or a special occasion. Peach Cobbler French Toast

This is a southern twist on a classic breakfast!

Equipment

  • Large Mixing Bowl
  • Shallow Dish (for dipping French toast)
  • Whisk
  • Spatula
  • Pot (for frying)

Ingredients

For the French Toast

  • 4 large eggs
  • 1/2 cup whole milk
  • 1/4 cup heavy whipping cream
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon peach schnapps
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 tablespoons butter divided for frying
  • 8 slices brioche
  • 1/2 cup pure maple syrup warmed

For the Peach Cobbler Topping

  • 3 medium peaches sliced into 1/2-inch-thick wedges (about 6 cups)
  • 1/2 tablespoon fresh lemon juice from 1 lemon
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • a pinch of sea salt
  • 1/2 cup packed light brown sugar
  • 2 tablespoons butter
  • 1 tablespoon peach schnapps

For the Fried Peaches

  • 1 cup all-purpose flour
  • - 2 teaspoons baking powder
  • - 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 3/4 cup whole milk
  • 1 egg beaten
  • 2 tablespoons melted butter
  • 3 peaches cut into eighths
  • 2 tablespoons flour for dusting
  • 1/2 cup sugar
  • 1/2 tablespoon cinnamon
  • Oil for frying 375°F

For Whipped Cream Topping

  • 1 pint heavy whipping cream COLD (2 cups)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon peach schnapps

Instructions

To Make the French Toast

  • To make the French Toast, in a mixing bowl, whisk together the eggs, whole milk, heavy whipping cream, sugar, vanilla extract, peach schnapps, cinnamon, and nutmeg until well combined.
  • Heat a non-stick frying pan or griddle over medium heat and melt 1 tablespoon of butter.
  • Dip each slice of brioche into the egg mixture, coating both sides evenly.
  • Place the coated brioche slices onto the hot frying pan or griddle and cook for about 2-3 minutes on each side, or until golden brown.
  • Repeat the process until all the bread slices are cooked, adding more butter as needed.
  • Serve the French toast warm with a drizzle of warm pure maple syrup.

To Make the Peach Cobbler Topping

  • To make the Peach Cobbler Topping, in a saucepan, combine the sliced peaches, fresh lemon juice, ground cinnamon, ground nutmeg, and a pinch of sea salt.
  • Cook over medium heat for about 5 minutes, stirring occasionally, until the peaches are slightly softened.
  • Add the light brown sugar, butter, and peach schnapps to the saucepan. Stir well until the sugar is dissolved and the mixture thickens slightly.
  • Remove from heat and set aside.

To Make the Fried Peaches

  • To make the Fried Peaches, whisk the flour, baking powder, salt, and granulated sugar together in a medium-sized bowl.
  • Add the milk, beaten egg, and melted butter to the dry ingredients. Whisk until a smooth batter forms.
  • Slice the peaches into eighths and dust them lightly in flour.
  • Dip each floured peach slice into the batter, allowing any excess to drip off, and carefully place it into the hot oil (375°F).
  • Fry the peach slices for about 1 to 1 1/2 minutes on each side, or until they turn golden brown.
  • Remove the fried peaches from the oil and immediately roll them in a mixture of cinnamon and sugar while they're still warm.

To Make the Whipped Cream Topping

  • To make the Whipped Cream Topping, combine the cold heavy whipping cream, powdered sugar, vanilla extract, and peach schnapps in a mixing bowl.
  • Using an electric mixer, beat the mixture on high speed until stiff peaks form.
  • Set aside in the refrigerator until ready to use.
  • To serve, place a slice of the French toast on a plate and top it with a generous amount of the peach cobbler topping.
  • Add a few pieces of the fried peaches on top.
  • Finish it off with a dollop of the whipped cream topping.
  • Repeat steps 20-22 for the remaining slices of French toast.
  • Serve the Southern Peach Cobbler French Toast warm and enjoy!

Notes

Adjust the sugar, cinnamon, or other spices according to your taste preferences. You can also garnish with some fresh mint leaves or additional peach slices for an extra touch. Enjoy this delicious and decadent breakfast treat!

Tips

  1. Use Fresh Oil to fry peaches
  2. Make sure peaches are ripe but still firm for frying, avoid using canned peaches.
